After a bumper chilli harvest this year I decided to make some Chilli Oil for my sister-in-law’s birthday, here’s the recipe:

 100 g fresh red chilli peppers
 1 l light olive oil
 2 tbsp paprika

Start 15 Minutes Timer

BE CAREFUL: Chilli pepper oil is a very strong irritant, make sure you wear gloves or wash your hands after contact with the chopped peppers or oil. And don't rub your eyes 😭

Remove the stalks off the peppers and chop finely in a food processor.

Add the chopped peppers to the oil and heat at around 120C for about 15 minutes, the peppers should stop bubbling as most of the moisture has been removed.

While they are cooking put your bottle (minus any plastic seal) in an oven at 120C to sterilize for about 15 minutes.

Let the oil cool a little.

Add the paprika to the oil.

Let the oil cool down completely.

Strain out the chopped peppers and store them fresh as a chilli paste.

Filter the remaining oil through a coffee filter or muslin.

Pour the strained oil into the bottle and maybe drop in a few dried chilli peppers for decoration.
